"A quick and easy homemade bar for your everyday training ride."
Preparation : 30 minutes Cooking time : 10 to 30 minutes Serves : 16
Ingredients :
200g unsalted butter
200g brown sugar
200g honey
400g porridge oats
50g nuts, raisins, crystallised ginger, desiccated coconut or (our favourite) roasted coffee beans
2 Pinches of flakes sea salt
Method :
Preheat the oven to 180C° and grease a 20x30cm in baking tray.
Put the butter, sugar and honey in a saucepan and heat, stirring occasionally, until the butter has melted and the sugar has dissolved. Add the oats and nuts, fruit, ginger, coconut or coffee beans, if using, and mix well.
Transfer the oat mixture to the tray and spread to about 2cm/¾in thick. Smooth the surface with the back of a spoon. Add the sea salt on top. Bake in the oven for 15–20 minutes, until lightly golden around the edges, but still slightly soft in the middle. Leave to cool in the tin, then turn out and cut into squares. Use aluminium foil to take a piece on your ride !
